Transversal cutting (Guillotine) for cutting confectionery
Guillotine cutting provides a transversal cut of the formed layers of confectionery products. The knife has Teflon coating and a system for scraping and lubricating.
The guillotine is used for cutting hard types of products:
-Honey-nut bars
-Hazelnut brittle
-Croquant
-Marmalade
Guillotine knife size can be: 400-2000 mm
The knife has two modifications according to the degree of movement freedom:
1.The pendulum method, where the product is partially supported
2.Two-position method, where the knife follows the movement of the product.
