Aerator for whipping and airing confectionery paste in a continuous way
The aerator is designed for continuous mixing and air saturation of the confectionery paste.
MKAIR-450 aeration unit is designed for the production of marshmallow and souffle by whipping in aeration head.
The boiled syrup and additional recipe components are pre-mixed in a screw-blade mixer, then the mixture enters the storage hopper from where it is continuously pumped into the aerator head. In the head of the aerator, the marshmallow or souffle is whipped and saturated with compressed air.
All recipe components are metered by pumps through electromagnetic flow meters.
The package also includes:
– Weighting station for acid, color and flavor
– Static mixers
– Backpressure valve.
The design of the Aerator and the method of whipping allow you to save protein consumption in the production of any whipped confectionery paste, while the saturation quality is an order of magnitude higher than when using batch mixers.
When aerating in the Aerator, the porosity of the paste is more uniform and finely dispersed.
