MK-MIX aerator
Aerators (Mixers) are designed for whipping confectionery or curd paste in a continuous way. Thanks to the special design of the aeration head, confectionery paste, boiled syrups can be aerated to a density of up to 0.2 g / cm3
The Mixer (Aerator) of continuous action is designed for mixing, saturating with air, homogenizing and making airy confectionery, curd and creamy dairy pastes, as well as mousses and yoghurts.
For pastry industry:
Aerators provide production of:
- Pastille (marshmallows). Aeration of the syrup can occur at high solids content of the syrup.
- Marshmallow production
- Saturation of chocolate paste with carbon dioxide
- Other high-viscosity confectionery pastes
For dairy pastes:
- Curd pastes
- Mousses and yoghurts
- Dairy desserts
By aerating the curd paste for cheese snacks, the weight of the final product decreases, on average, by 10% (while the volume remains the same), the structure of the paste becomes homogeneous, which improves shaping, reduces the number of defects on the line, improves the taste of the final product.
Aeration of desserts is not only a popular idea on the market, but also very profitable one, on average, the volume of the paste doubles, its structure and shape improves, and the taste becomes more delicate. What’s more, the demand for aerated desserts is growing every day.
Yoghurts, mousses:*
Aerated yoghurts and mousses are a new direction of the dairy market, which allows, by saturation with nitrogen, to obtain, on average, one and a half times more paste, due to which the calorie content of such a product will decrease, and the taste will become light and delicate.
Aeration of ice cream and cream (including non-dairy one): *
Aerated ice cream is a relatively new trend in the Russian market. It not only becomes softer in taste, but, on average, its calorie content is reduced by one and a half times, due to which the demand for such products is more than stable.
Aerated cream not only surpasses ordinary whipped cream in its taste and physical qualities, but, unlike it, does not lose its shape over time and the cream paste after aeration will, on average, double.
A clear advantage of the Mixer (Aerator) in comparison with analogs is that the rotor and stator are made of solid stainless metal without the use of welding, thereby achieving the highest level of hygiene, since all oxidation possibilities when interacting with the aerated product are prevented.
The stator of the aeration head is made of solid material on CNC metalworking complexes.
