Disc cutting for cutting confectionery

Disc cutting provides cutting and separation of formed confectionery layers.

Depending on the type of confectionery, cutting units have different modifications. For soft products there are circular knives made of stainless alloy steel with a hardness of Ra = 40-46, for hard products, such as Croquant or Brittles, knives made of high-speed steel with a hardness of at least Ra = 62 are used.

The knives have a special double scraping system and an anti-stick agent lubrication device.
